ウイグルにとってはラグ麺はイタリア人にとってのパスタみたいです。ほぼ毎日食べる料理で、ウイグル人に欠かせない。
このメニューでウイグル料理で非常に人気の麺とその麺を使った料理です。

Uyghur pulled noodles, laghman, is a very popular traditional Uyghur food and it is cooked in every home at least few times a week. As 99% uyghur men love Laghman, so Uyghur ladies make Laghman at home almost every other day. Uyghur laghman is like pasta for italian, only difference is it's not like pasta or udon you can buy from supermarket, it's all handmade from scratch, either at home or restaurant.
=== ラグ麺トッピング①:羊肉と野菜炒め
Uyghur laghman is topped with lamb/chicken/beef meat vegetable or vegetable only stew, you can make the topping with any vegetables, stew with tomato. Menu at Laghmen restaurant has more than 20 toppings.

Süyuqash(スユクアシ)is Uyghur noodle soup, Uyghurs call these dishes “meal of the tired”, “meal – rest”,it’s the same way cook laghman just add more water to the stew or add leftover laghman stew to boiled water, make it to soup base, and pull the noodle, cut it to figure size add to soup.

ラー油,the tradition Uyghur cuisine is not spicy, but since more and more Chinese spicy food came to Uyghur region, Uyghurs started adding red pepper or ラー油 to the dishes, so I want to teach the student how to make ラー油 at home, and add some ラー油 to laghman or Süyuqash, makes them way different.
=== ウイグルの塩ミルクティー
日本ではありえませんが、ウイグル人にとってはミルクティーに塩を入れるのが当たり前です。ミルクの代わりにバターを入れてもいいです。
